I have written to this sight numerous times and slowly over 4 years am self diagnosing my problems with the help of you guys.  I am confirmed Bioposy of Celiac's but also have a million food allergies, which I find very hard to pinpoint.  I've always battled constipation, stomach bloating, water retention and puffiness in the face, hands and feet.  I'm 28 and thin but have terrible problems with feeling sick to my stomach, achy all over (especially behind the neck) and fatique ( yet I get plenty of sleep).  I have 2 children and they have inherited all the problems too.  I've also been on B12 injections for 4 years and have healed my Insestines greatly.  We've elminated all dairy and wheat and gluten, eggs, soy.  My son and I tend to crave sugar and become hyper off of it.  Almost like an addiction yet we are very health conscious and we eat very balanced and healthy meals, so I am so stumped why I have still so many problems with my gut.  My question to all of you is;  I am trying the ATKINS Diet of eating meat and low sugar veggies and it is very hard as I can have no dairy.  But after 4 days of straight meat and 2 cups/day veggies all my swelling, puffiness and bloated stomach is completely gone. I never feeling starving or the crashes of Fatigue after meals. ( I am not on the diet to lose weight but to eliminate Carbs and Sugars and thought this would help.)  I definelty feel 100 times better on it but it is almost impossible with all my allergies to stay on it and I am trying to figure out if it is the Carbohydrates that bother me or the sugars or both???  I have seen posting on Carbohdyrate Intolerances on the listserve.  If any of you avoid all Carbohydrates do you eat Fruit? Any information on sugars and carbohydrates that might help me please let me know.  Any realtions to bloating or water retention linked to eithor Carb's or Sugars etc.
