i heard from 4 people, all of whom had similar info:

there's several market concept superstores in southeastern nb, and just
about every semi-decent sized town has a superstore :)
i know that moncton, nb certainly has a good celiac selection at trinity
market & riverview market.
the irving restaurants have a low-carb menu, and will do what they can
to steer you clear of  gluten (the one in aulac (where the trans canada
meets the road to pei) has GREAT service, the wait staff know or will
find out, what's safe :) and the bigstop (salisbury, about 25 minutes
west of moncton on the trans canada) is a good place for food too...

i know that boston pizza (contrary to how it sounds) does have a few
gluten-free items on themenu (i'm partial to the meal sized spinach
salad - even tho i don't LIKE spinach, this is good)... and they will
get the binder w/ ingredients out for you if need be :)
