In light of my recent postings about vinegar and ppm, and how much gluten that really is, I thought I should post the following information, just to put things into perspective.
On the Nature's Path cereal website, they have a letter regarding some ELISA testing that they had done last october.
The testing lab says: "One ppm is equal to 1mg of gluten in 1 kg of sample product"
So, 160 ppm would be 160mg of wheat flour residue in a 1kg bag of rice flour, for instance.

Also very interesting is the statement about fermented or hydrolyzed products:
"this can result in a severe underestimate of the allergen content of your samples".
