I had an opportunity, while on vacation in Scottsdale, to attend a cooking class given by LynnRae Ries. It was one of the most fun, informative afternoons I have spent since I was diagnosed. We learned many dessert baking tips, baked and ate delicious mousse tarts, rugelach, eclairs, turnovers and streudel. I even brought some back to my husband and he thought they were from a regular bakery! LynnRae has a bread baking book that everyone there was raving about. It is very simply written and can be used with or without a bread machine. I bought 1 but haven't had a chance to try it yet. I did make the rugelach and my glutenfree friends here in IL loved them.
