It is my understanding that light olive oil can take more heat without
deteriorating than does, for example, virgin olive oil - neither of which
are really processed in paleo fashion. You may consider using the light
olive oil for marinading purposes & the virgin, etc., types for raw salads,
etc.
If you marinade at room temperature, there is a possibility of
succeeding with coconut oil (also non paleo) - depending on how warm/hot you
keep the kitchen. I use an unrefined coconut oil. so it's harder to keep it
liquid, and there's that sweet, coconut taste that can sometimes seem
nauseating if you're not using a bunch of herbal flavors or not cooking
tropical-style foods. Coconut oil is one of the best concerning using higher
heats, although - when I do cook - I try to use the lower heats anyway.
