It's important to be clear about something:
the green part of the sprout that grows out of the seed is gluten free.
it has no seed - it's just a green plant.
the seed that the plant has been sprouted still has some gluten in it -
therefore it's not gluten free.
growing and using wheat grass sprouts (or other sprouts) is an
*entirely* different thing that sprouting seeds, then grinding them and
using them in baking. the former is free of gluten as long as you don't
eat the seed. the later is not gluten free.
