My daughter has been gluten free for 2 years. All follow up blood testing
has shown that her diet is "compliant"--she is not eating gluten. However,
she continues to have various mineral and vitamin deficiencies. She eats a
variety of fruits and vegetables, appropriate grains and fish and poultry.
She really likes her fruits and vegetables. She does not have anything with
trans fats or artificial colors. We do take GF vitamin and mineral
supplements. So, I am wondering if there is another nutritional condition
in addition to celiac. Does anyone have ideas as to what I should look for.
