Thanks to those of you who took the time to reply for my request for information about going to Cabo and eating GF while there.  I heard from three of you as follows:

In Mexico they put bread crumbs in all of their ground beef.  Flour is harina, trigo is wheat.  "No harina de trigo".  Most tortillas are made from corn; but as they become more Americanized, they serve flour tortillas.  I've never known a corn tortilla to contain flour so ask for corn or maze tortillas.  They grill chicken and fish usually with no flour or breading.  (They) love to pretend they know what you are talking about and often don't and don't care - so you really have to stress your "allergy".  Grab your throat as you explain and pretend you are dying!!!  Talk to the manager who usually has decent English.  The Baha is more Americanized that the mainland.

Is this in Mexico?  If so, I eat alot of Mexican food ALL the time and since by design... wheat and flour are not used in everything nor is bread.  Watch out for Chile Rellano. If not the excuse the reply... let me know if you any specific interest or questions.

I went to Cabo San Lucas and honestly, was very careful, but had problems when I got back. we never traced it back to a bug or anything so I dont know. I bought some black beans and tortillas from the grocery store -- thought that would be a good thing to
do. of course stay awy from produce dairy products and the water. also my doc suggested loading up on pepto bismol from before leaving to after I got back.
