The March 2005 issue of Vegetarian Times has a 5-recipe focus on potatoes.
The first four recipes (earth apple torte, potato lasagna, four-alarm
chipotle potato casserole, and the baked potato fan) are inherently gluten
free. The 5th recipe (cheesy potato spoon bread) only contains 1 cup of
flour (versus four cups of mashed potatoes), so I think a cup of nearly any
gluten-free flour mixture (plus a bit of xanthan gum) could easily be
substituted in this quick bread.
Please note that I have not tried any of these recipes - I just noticed
their celiac-friendly qualities when browsing through the magazine. :)
