Dedy, thanks for the additional information. I have Ron Hoggan's book, and
have read many of his very fine articles.
You might be interested in Dr. Kenneth Fine's article about non-Celiac
gluten sensitivity, and his stool testing for same at his Enterlab in Texas. Yes,
he does test samples from all over the world- I checked for some other
people! It is his contention that while some 1 out of 200 or so people will have
full blown Celiac Disease, the incidence of non-Celiac gluten sensitivity is as
high as 1 out of every 3 people. I myself and many people I know, suffer a
variety of odd symptoms related to gluten sensitivity, making it no surprise
to me that so many people feel astoundingly better on a Paleo (and therefore,
gluten free) diet.
