A friend of mine was asking me about the paleo diet,
and as I was explaining to
her reasons for avoiding grain and legumes I realized
that I might not know all
of them. Also, I didn't know how to answer her
rubuttals to the reasons I was
giving. So I was hoping for some help in expanding
and clarifying the following
list of reasons for avoiding grain (as well as finding
answers to the common
rubuttals to those reasons):
Reason 1: Grains and legumes were introduced very
recently (in evolutionary
terms) into the human diet, and so humans are not
adapted to eat them.
Rebuttal: Just because humans have started eating
grains recently doesn't mean
that they are not good for us.
Reason 2: Raw grains and legumes are poisonous when
uncooked, full of aflatoxins
and alkaloids.
Rebuttal: So what? We cook grains and legumes before
eating them, and that
cooking destroys all but trace amounts of those
toxins.
Reason 3: Even whole grains produce an unhealthfully
high insulin response
Rebuttal: What about sweet potatoes, yams and beans.
Those food have low
glycemic indices.
Thanks for any info and clarification,
L
