Hi listmates, 
My question concerned the best way to freeze gf baked goods to ensure freshness.  Almost everyone agrees that the best way to do it is to let the bread cool, slice it, place wax paper between each piece of bread and place in a plastic freezer bag.  Some people wrap each slice in saran wrap before placing in plastic feezer bags and some people separate each peice with aluminum foil.  Some people do not slice it before freezing it.

Here's one good response:
my father used to work for a major bread company.  Most bread in stores is frozen,
right in the wrapper, and then brought to stores as "fresh".   so you can just
shove it in the freezer.  However, since gf bread tend to stick to itself, cut
squares of wax paper and place a sheet between the slices for ease in removal from
freezer.  You can either do individual slices or groups of slices.  My mother used
to do this to meatloaf when storing in freezer.  It works!

As far as muffins, most people use the same methods - cool; wrap in foil, saran wrap, wax paper, or nothing at all; and toss in plastic freezer bags.  

Also, almost everyone suggested reheating the baked goods right from the freezer in the microwave, toaster oven, or oven.  One respondent wraps each muffin in foil before freezing so they are ready to pop right into the oven.
