I'm always looking for the quickest short cuts to good food. I've been
working on this quiche/fritata recipe. It originally came from the South
Beach diet cookbook. I've found a very easier way to make it. Takes so
little time & so good & healthy.
(1) Preheat oven to 350.
(2) Gently heat 2 or 3 tablespoons olive oil in 10 inch skillet. Pour about
10 ounces frozen chopped spinach in. Add chopped bell peppers, chopped
green or red onions & sliced mushrooms. Cook on medium high heat until
excess water is cooked out of the frozen spinach.
(3) Beat 4 to 6 eggs & a little hot sauce. Pour over veggies in skillet.
Add about 1/2 cup grated cheese if desired. Stir a few little circular
strokes here & there with a fork to slightly mix ingredients, reduce heat
then let sit on stove top for about 2 minutes.
(4) Transfer to oven & bake 'til eggs are just "set" (about 4 to 6 minutes
depending on how large it is). Cut in wedges & remove from skillet
immediately so the eggs don't over cook.
We like it with salsa & cooked GF cereal for breakfast.
