Another GF recipe that makes a difference in my home is this one:
2 corn tortillas
Shredded cheese
Salsa
Butter
Put butter in pan and melt, add 1 tortilla, top with cheese and salsa,
add second tortilla. Flip.
Great for a quick lunch - you can even wrap it in foil and take it with
you to eat later.
