I’m the only one in the family that likes beets, so occasionally I will
eat a meal of mostly beets. The first time I did this I was alarmed when
I urinated, for it was pink. I thought there was blood in my urine.
Finally, I figured out it was due to the red of the beets. Over the
years the PINK became more pronounced when I ate beets. This was years
before I ever heard of celiac disease.

My daughter was diagnosed as having CD so the entire family went on the
GF diet to support her. It was in the back of my mind that someone else
in the family might have it as well since it is genetic – but I didn’t
think it was me. I never had any of the GI problems that are apparently
so common for celiac. If anyone ever spent extra time in the bathroom it
was my husband – so it had to be him. (Of course, he thought it would be
me because I am so short.)

Sorry for the digression.

After all of us started eating GF, my son and I found that we apparently
have CD too. We have been GF for 6 months now. Every couple of months
since we’ve been on this GF diet I have tried beets. Each time the pink
has been lighter. Now it is so light that it would be unnoticeable if I
weren’t looking for it.

For me this appears to be a way of checking the permeability of my
intestines. Has anyone else every noticed something like this?
