I don't use that recipe but pie dough does freeze and I often think it's

flakier when it has been frozen.  Nancy

I recently used one that had been frozen for about 8 months.
 Be sure to let it warm up a little before you start rolling it out.

Yes, by all means you can freeze it...

Just in case you want to try a different crust, I came across a good one in
the
book The Gluten-Free Kitchen by Roben Ryberg....it's not easy to work with,
but
the results are good.  Diane
