Hi All,
Just tried a new recipe last night and it turned out so well I thought I would share it. My celiac daughter thought it tasted like fettuccine alfredo but with rice instead of noodles.
I am always looking for rice recipes and it seems like most of the recipes call for "cream of something" soup. This one was very easy and good.
RICE ALFREDO
2 cups long grain rice (I use Uncle Ben's)
4 cups chicken broth
1/2 cup cream
3/4 cup parmesan cheese
4 tablespoons melted butter
1/2 cup toasted pine nuts
Cook the rice as you normally would, substituting chicken broth for water. When the rice is done, fluff it with a fork. Add the cream, parmesan cheese, melted butter and pine nuts. Transfer to a serving dish and sprinkle top with extra parmesan cheese.
I made the whole thing ahead of time last night and just covered it with foil and heated it up in the oven. It was also very good left over.
