I made the Montina Bread from the recipe on the package of Montina
All-Purpose Baking Flour Blend. It was wonderful and beautiful
darker bread. I used it to make sandwiches and they did not crumble.
The toast was good too. The instructions are a clear & a bit
different than the other GF packaged breads that I have made. This
recipe is for oven baked bread. There is no information on the use
of a bread machine. If you must use one, confer with the folks at
Montina. http://www.montina.com You can order the plain flour or
the blended flour from the website.
The flour is a blend of white rice flour, tapioca flour, and Montina
Pure. The fiber content for 2/3 cup of the blend is 5 grams (22% of
the daily value).
I was inspired to post this today, as Marlene's Mixes has a new
Fluffy Biscuit Mix made with Montina Flour. The posted information
today indicated that the mix was new ($5/package) and not on the
website product list yet. http://www.marlenesmixes.com You can
check her post in the Archives if you missed it.

Happy baking and give Montina a try,

P.S. I have no financial connection with either Montina or Marlene's Mixes.
