In france there is a tradition of forcing ducks to enlarge the liver with
fatty deposits , it is a natural capacity that ducks and geeses have to be
able to store enough for migration but it is exacerbated thru unatural
feeding. they bypass ducks and geeses taste barrier by forcing directelly
into the throat of the animals mashed grains . for this pupose feeders have
been created that look like a funnel with a screw in the middle animated by
a crank.
as a result you get the famous delicatessen "foie gras ".
now from the wild ducks at the right season fed on natural foods ( for a
duck) it is delicious but thoses ones are sick exageration of the
phenomenon.
to that wild ducks also add stored visible fats under the skin.
