As we prepare for the feast days to come, I thought I would share the way we did Thanksgiving last year for a large family gathering out of town-with our littlest (8 y/o)daughter the only celiac...
My mom purchased a regular turkey for the larger feast, and a cornish game hen for our daughter-now forever known as the "baby turkey"-she bought brown rice and wild rice from Trader Joes, I brought some GF mild Italian sausage, onion, celery, garlic, and parsley-and "made-up" a stuffing recipe from these ingredients (email me for details) the salad, vegetables, and jello salad were all GF (except the rolls, of course); lastly we made a pumpkin custard from the excess pumpkin pie filling.
Well our daughter was the hit of the children's table! She beamed with pride as cousins, brothers, sisters, grandparents, etc admired her "baby turkey". She ate well that evening and enjoyed herself! Her grandfather (my dad) couldn't stop raving about the stuffing I made-up, so I left the recipe as best I could remember it-and he made more the next day before we left!
This year all the children want their own "baby turkey" and the birds(large and small) will all use the rice/Italian sausage instead of the regular one we always make.
