While watching Sara Moulton's cooking show today she made a Cauliflower Cheese Pie using a Potato Crust.  If you go to www.foodnetwork.com  and then to Sara's Secrets you will find her recipe.  If cauliflower isn't a favorite, I would easily add other veggies to that crust, just a few alterations in taste.   Nancy
