I attended a seminar on detoxing the body last time my husband and I were on
a cruise. The personal trainer/nutritionist in the end just wanted to sell
the ship's seaweed detox program (which supposedly is not available in the
US and the only reason they can sell it is because we were in international
waters - whatever!). 

Anyway, he explained, and I have read the same since then, that we are born
with all the fat cells we will ever have. When people gain weight, the fat
cells grow as in more fat is stored in them, and when we loose weight fat is
released from the cells and they shrink. He said the reason some people
can't loose weight is because of all the toxins in their bodies like
caffeine, sugar, meds, etc. The toxins form like a shield around the fat
cells and it's impossible for the body to get to the fat to burn it. In
addition we start retaining water, the body's defense mechanism (?), which
makes us seem even heavier.

I wish I had more research on this - haven't really looked.
