I have never heard any suggestion that the state of the nutrients has much to do with this
widely quoted idea. I find it does work this way for me personally, the 20 minutes being
rather surprisingly accurate. I would have expected a difference, myself, but whether it's
salad or steak or raw broccoli doesn't seem to affect the timing.
