Such an easy recipe that my 6 year old granddaughter made it. All I did was take care of the hot noodles and the hot oven.
Add 1/2 lb. (rice) pasta to boiling water...I used Notta Pasta fettucini or linguini. A non-celiac friend uses fine egg noodles. Cook only for 4-6 minutes, then drain and rinse with cold water to stop the cooking. Meanwhile, preheat oven to 350 degrees; butter an 8x10 baking pan and then prepare the rest of the stuff in one large bowl....
Combine well:
2 cups any milk O.k. to use 1 %. I used regular.
1 cup cottage cheese
1 cup sugar
1 cup sour cream---can substitute yogurt
2 tbs vanilla
4 lg eggs lightly beaten
1/2 cup golden or regular raisins (optional)
4 oz softened cream cheese, cut into tiny pieces, can use more (bar)
1 stick unsalted butter or less, melt and put some into mixture and drizzle rest at end. (I honestly think you can use 3/4 of a stick and it would be sufficient.)

Put drained pasta into bowl of mixture. Stir well.
Pour stuff into pan. Drizzle some butter on top. Top generously with cinnamon. Bake in preheated oven for 1 hour. Watch that it doesn't burn. If your oven runs hot, it will take less than an hour.

Can be served warm or cold. Good as a side dish...but sweet enough to be dessert.
A friend gave me this recipe, but when I bought the Notta Pasta, there was a sampling of their recipes in the box and one of their recipes was similar, though not exact.
Linda
