After posting my observation that Kikkoman claims their soy sauce is safe for celiacs, I received a tidal wave of responses, uniformly sceptical.

I thought I must have been misreading Kikkoman's web site, but here it is: http://www.kikkoman-europe.com/e/11/11-02/index.html?main=main.html

ie, "our products are all suitable for patients suffering from coeliac disease" (note this is their European web site).

I have no axe to grind, but this subject is of great interest to list members and I have sent an email to Kikkoman asking for verification of their claim.

I will keep you posted.
