So there isn't anything wrong with UNCURED bacon, is there?
If nitrites are the "enemy", then I think it's illogical to
cite bacon only; what about all other preserved meats?

Webster's defines bacon as:

  "The back and sides of a pig salted and smoked;
   formerly, the flesh of a pig salted or fresh."

So there is nothing in the definition of bacon that
says it has to have nitrites/ates in it. Bacon without
nitrites is still technically bacon.

IMHO, bacon is closer to paleo than other "meats"
like hotdogs, with all the extenders they have.
