"How long did it take for you to notice:
weight loss"
Less than a week. I went on the "protein power (see below) intervention level" (low- to mid-carb, since I cheated a bit with fruit), lost 8kgs (approx. 16 pounds) during the first 6 weeks, didn't exercise and wasn't hungry once.

"energy increase"
Just two meals and six hours! There was a literal "power surge" goin' on! However, I did have some headache too during day 2 & 3.

"abatement of any disease symptoms"
I had serious IBS, so it took about 10-14 days before my body had healed enough for me to really notice any significant change. In due time other symptoms went away as well.

"My wife has been vegetarian for 15 years, and is having a hard time getting her mind around meat being cooked in the house. She does acknowledge that, unlike her, I simply do not thrive on a high-carb diet, and she accepts that simple calorie-cutting doesn't necessarily lead to
long-term weight loss. She's also very concerned about increased food costs, since we'll essentially be buying two sets of groceries, and
meat costs a lot more than the beans and pasta we've been living on."

If she's an ethical vegetarian I can understand how this can cause some major problems. However: if your wife loves you and cares for you she should let you try this to see if it works out. As for the cost: what might your medical bills turn out to be at if you keep on the way you are? And human suffering is also a "cost" in itself! There are lots of cheap vegetables out there that aren't grain or beans. And she, does she REALLY have no health problems? In that case: lucky her! Grain especially is really BAD food!!

"she is having a hard time shaking the mainstream "fat bad, carbs good" view. Any advice on things to give her to read?"
Lots of links at "paleodiet.com". Books: "Neanderthin" by Audette, "Protein power lifeplan" by Eades&Eades (the one I live by), "Life without bread" by Lutz&Someotherguy, "The cholestrol myths" by Ravnskov (VERY good reading).
Best wishes;
Erik F.
