Dmitrios Douros kindly posted his recipe for filo pastry recently which included dough enhancer (Kitchen Specialties or Magic Mill, both of which contain whey, soy lecithin, tofu, citric acid, dry yeast, sea salt, natural spice blend, corn starch, vitamin C (ascorbic acid), natural flavor.)
Does anyone know how to get this in the UK? Here dough enhancer tends to mean a product which includes gluten.
Or could I make it myself?
