Montina is the trade name for a flour made
from Indian rice grass, grown in ... you guessed
it: Montana. Go to www.montina.com for more
details. The product I use in the recipe is the
flour mix, not the 'virgin' grain itself.
While it is not critical to the recipe, it adds
flavor, color, texture and a host of vitamins
and minerals. If you don't want to use it, just
substitute more of the Schar-B for it.
- What is Schar-B flour and where do I get it?
Schar is a European company. Schar-B is our
staple flour: very forgiving, easy to work with,
good results. You can buy Schar products through

- What is dough enhancer and where do I get it?
It is a combination of whey, tofu powder, yeast,
salt, ... It adds flavor, strength, shelf life
and makes the bread very fluffy. The one we use
is called: 'Kitchen Specialties Dough Enhancer'
Enhancer'. You might find it at your local
gourmet supermarket or go to the web, search
for 'Kitchen Specialties Dough Enhancer' and
pick any one of the many places that have it.
