Well I can't tell you *exactly* what is lost - but it is well known that
vitamins in foods (notably the Bs) lose their potency upon freezing (or
cooking for that matter). There are many, many links on-line - just
Google "nutritional loss freezing" to see.
I quite agree with you regarding chickens - you have hit on the reason
that I prefer the meat of chickens that were fed a natural diet.

commercial chickens, even those organic/biodynamic and pastured, are
fed grains which apparently disrupt their
hormonal balance, increasing their egg production.... in the wild, birds
lay eggs seasonally not daily.
