Indians in the Yukon Territory in 1979 preserved salmon by splitting it so it
would be spread, then scoring it in a square pattern (to maximize exposure to
air) the just letting the wind dry it. They explained that putting it over a
smoky fire of willow twigs is to keep the flies off.
I kept the one I was given in a paper bag for about a year, breaking off
chunks now and then. It was delicious, and much better than I've ever bought.
