These are responses I received:
Very helpful; speak to maitre'd when you board the ship.  Maitre'd asked
that we call to let them know time we would be coming for dinner.  Waiater
was always ready to deal with situation when we arrived.
NCL to Hawaii:  Let them know in advance.  Touch base with them when you
board.  Provided GF bread at restaurants throughout the ship.

NCL cruise last year--they assured me beforehand that they could handle GF
diet--it is a problem for them due to free style dining where you do not
eat in same dining room all the time.  Bring GF breadsticks/crackers.
Also went on QE2 of Cunard Line.  Handled it perfectly.  Had GF toast with
coffee.  Ate at same table most of the time.  Advantage of having same
servers each time.
