Hello everyone.  My name is Dan.  I have been on a Gluten free diet for
over thirty years.  I also love eating.  I have worked in over six eating
establishments, and I have taking cooking courses of different kinds for
many years.

I am writing because I find it interesting that many people are asking
for restaurants where they can eat Gluten Free.
The reason I find it interesting is because I eat out all the time.  My
favorites are South East Asian and Mexican restaurants.  In Asian
cuisine, just make sure that noodles are made of rice or beans, and don't
use regular soy sauce.  In Mexican, just don't eat flour tortillas.  Do
be careful that some Americanized Mexican places will marinate meat in
Soy Sauce.

To be honest, I do avoid Italian restaurants as a rule.  It is just too
hard to find a variety of things to eat without noodles, bread and
cheese.
Southern style cooking tends to include flour everywhere as well.

Most other restaurants, I make a point to scare the server into
understanding that I will get sick if the food has Gluten.  I also make
it a point to know how things are cooked in restaurants, and what
questions to ask.  Unfortunately, experience is required for this.  I
have had plenty experience getting sick after eating at a restaurant, but
I would rather take the chance and learn from a mistake than limit myself
more than I have to.

Another good point to eating out like this:  The more restaurants hear
and see Celiacs, the more they will become conscious of our issues.
