I was in a super hurry when I made this. I didn't have the time to crush
the garlic, add the soy sauce, mince the rosemary, etc. I was really
surprized how nice this came out. It's light, but very tasty. I
marinated chicken breast chunks for about an hour & grilled them on
bamboo skewers. I also brushed this marinade on the skewered veggies
before I grilled them. I served it all over rice. Mmmmmm . . . . .
you'll like it.
4 cups fruit juice
1/2 cup apple vinegar
1 tablespoon salt
1/2 cup olive oil (or any other oil)
For the juice, I used a mixture of apple, cranberry & grape, but I'm sure
any juice will do.
