Hi list mates.
All this talk of chocolates is making me hungry.
I can't eat soy, either, so all chocolate that I have found is off limits,
except plain bakers chocolate. Since it has no emulsifiers in it, it doesn't
mix up with anything very well.
Are there any chocolatiers out there that have come up with a way to mix
sugar and pure chocolate together? Since it seems to take an emulsifier,
what is one that would work that isn't soy or wheat? I can eat eggs. Is
there an egg lecithin available commercially? Milk is out, too, but I can
use coconut milk.
I've used baker's chocolate for cakes, but not successfully for other
candies. Insights would be appreciated. Helen in Idaho
