I received many comments (e.g. below) that the Outback restaurant chain now has an excellent gluten free policy, and have an extensive gluten free menu:

Sorry about my negative note about Outback included in personal tips for newly diagnosed Celiacs.  This was based upon a bad experience about 3 years ago and I hadn't eaten there since, but Outback has turned around 180 degrees since then.  This is representative of many comments I received:

You should not have included Outback as a restaurant to avoid.  They are
just about the best restaurant to go to - chain or otherwise!  They have a
gluten free menu on their website that is quite extensive.  Of course, you
need to alert the manager when you arrive to your status as a celiac
patient.  You also need to familiarize the manager to the GF menu (most
don't even know it exists).  Let the manager know that if the kitchen
strictly follows the Outback standards for preparing GF menu items, that the
food will be safe for you.  Numerous people on this list eat at Outback
safely.  I believe that Outback in particular should be lauded for taking
such a forward-looking stance with their GF menu!
