Thank you to every one who responded, too may to thank individually.
First and foremost, I urge everyone to make sure ALL YOUR ingredients
are GF. I will NOT list GF before each item. I will also make a second
post if i get alot of new replies.

Veggies and Dip - cut up any variety of veggies and put in a plastic
container or zip lock bag. Put your favorite dressing in a separate
container. This can be put next to a cold or frozen drink in the bag,
or use a small freezer ice pack. Fruit such as apples with peanut
butter work well too.

Rolled up cold cuts, inside the roll you can put their favorite condiment.
Also add cheese,lettuce, raisins, cream cheese, pineapple juice(thats right)
Obviously you can adapt this as you wish.

Tuna fish, egg salad, chicken salad
, turkey salad, shrimp salad all of
these can be put in a small plastic container, next to an ice pack.
With this add their favorite cracker, bread stick or pretzles.

Crustless quiche (new to me)

Any left over meat in the fridge, cut up, add some mayo or mustard,
or salad dressing and keep in one small container. In another slightly
larger container have a salad or just some lettuce. They can mix the meat
with the dressing ontop of the salad. This would go for a grilled chicken
ceasar salad type of meal also.

Cheese sticks, Polly O String Cheese is great. Freeze your yogurt
the night before, especially Go Gurt.

Home made rice krispie squares, be inventive, add lots of nuts and raisins
and peanut butter too. You could really add anything to make it more
substantial, similar to a granola bar.

Home made soup, stew or canned stew(hormel) in a thermos. Rice,pasta with
any
 sauce even mac n cheese, all can be sent in a thermos.

Van Camps Beenie Weenies in a thermos.  Delimex Taquitos.....
Hormel snack size meats, make your own "Lunchable"........

Some people suggested things like Grilled Cheese, obviously you need
access to a microwave for those sort of meals.

Muffins, Dilly bread from Carol Fensters book, Chebe bread and bread sticks.

Lunch box extras:  crackers, chips, pretzels, rice cakes, marshmellows,
M&M's, Yogurt, Fruit, fresh veggies, raisins, nuts, squeezable peanut
butter and pudding cups, sliced cheese, dried fruit.

Look at this list, we are amazing, great ideas everyone.
