Most of the rice paper is very salty & doesn't make great desserts.
Sometimes I can find ones that are salt free.

You can also use them to make cheese filled pastas or layer like lasagna.
Have you seen the tapioca ones w/ sesame seeds? I run them under water & put
on a rack on the microwave for about a minute. They puff up into large
crackers. Very good.

Rice paper is an excellent substitute for phyllo dough. Just be sure that
you serve it hot from the oven. Once rice paper has been baked, then completely
cooled, the paper gets quite rubbery and tough to bite through. You can fill
the papers with anything from fruit preserves, to baklava filling, to
custard.
