Two folks in our local support group are biopsy dx celiacs and have been
gluten free for several years but still cannot digest complex carbs such as beans,
legumes, rice, corn, potatoes.  Both were given endoscopies last week.
Separate doctors commented to each patient after the procedure that "the mucosal
lining appears flat", "looks like classic celiac disease".  However, the
biopsies for both individuals came back normal.

Has anyone had a similar finding?  Do you have theories on what might be
happening? Could there be an inability to get the carbs digested to the point that
they can be absorped by the now healthy villi? Thanks for your thoughts.
