Suet is the fat that collects around the kidneys.
That New Zealand grass fed beef may not be pure grass fed. Much of the
"grass fed" beef spends 30-120 days in a feed lot fattening on grain before
going to market. Even 30 days on grain will totally ruin the lipid profile
of the cow and undo most of the benefit of being grass fed.
Ask the folks at your market if the beef is grain finished or corn finished.
If it is, I recommend finding another source of beef.
