I have received information ranging from bringing several of my own food items to compliment those that I can get at a restaurant to which spices I should request at the restaurants there. Some people who responded had been to other hotels in the area and
said that everyone was very helpful and almost everyone suggested just talking to the chefs to ensure they are familiar.  Bring Celiac cards if you have them (or make your own) to slip to the servers and kitchen staff. Below if the information about the
spice; Adobo.

I got hold of the head of the Quality Control
department.  Yeeha!! The gentleman was very nice and professional and he
was also familiar with the concerns that the FDA (Food and Drug
Administration) have had with people's conditions and allergies to
wheat, rye and barley.  A few years ago the Bohio Products' plant that
he works in got audited by the FDA and passed the tests for wheat-free
products for the "adobo" and the "sazon con culantro y achiote light."
The "recaito criollo," the "sofrito criollo" and the "sazon con culantro
y achiote regular" are made with wheat flour and/or MSG, therefore they
are no-nos.  These are the ones we need to ask for when we eat
Puerto Rican food so you can enjoy them.

Unfortunately I don't know of any specific dining establishments yet, but due to the wide range of fresh foods available there, a Celiac should be able to get by without any trouble. We just have to be as careful as always.

Even though I won't be going until November, please keep the information coming in, especially if you have a specific dining establishment in mind! This list is so helpful. I will be sure to do a full write up on my dining excursions upon my return!
