Other than nitrates not being "paleo", what are the negative effects of
them? What studies support the notion that they are bad? From what little
research I've done, it looks like nitrates were thought to have caused
stomach cancer, but subsequent studies have proven this theory wrong. But
like I said, I haven't looked into the matter.
I eat regular 'ol bacon quite a bit because 1. It is easy, cheap, and
convenient 2. It is tasty 3. My symptoms (acne, indigestion, lethargy) go
away even when eating lots bacon 4. I haven't seen anything definitive
saying that it is bad. I know this is the Paleolithic support list, but I
follow more of a paleo "model" than a paleo "prescription". I'm a
relative-risk sort of person, so if it is found there is a 1/100,000 chance
of getting cancer by eating bacon, I'd probably still eat it. I have more
of a chance of getting hit by a car when walking out my front door.
