I'm intimately familiar with buckwheat, as we've grown it many times on
our farm. It's a flowering plant with heart-shaped leaves --- looks
like an attractive white wild flower --- and when the flower goes to
seed and the seeds ripen, they must be harvested and hulled before they
can be eaten. They are small, hard seeds and the hulls hold on rather
tightly --- it would be rather difficult (and extremely laborious) to
hull them by hand, in contrast to, say, a sunflower seed, which can
easily be hulled with fingers and/or teeth.
