I grew up eating brains, with eggs, or just sauteed with blackened
butter. We mostly had lamb brains; these days I can get pork brains.
My family heritage was Polish and Czech on my mother's side. My
father's parents, Nicaraguan and German, would never have eaten
brains.
I usually cook them with eggs, but have eaten them raw, sharing with
my dog. I'm still alive, so I guess the pork is clean enough.
