Okay, my brother, who is Gluten and Casein free, has been invited to dinner
at a friends.  He mentioned the gluten fee casein free stuff, and their
reply has me a tad confused/concerned.  So I'm asking for opinions, is it
just me, or do you agree this sounds a bit risky, at least.  (I have never
really dealt with Cajun/Creole food before, so have no idea how it is
prepared etc.  This is ALL NEW territory to me.)

"You should be able to eat Cajun/Creole food. The process of making a roux
s to take the gluten out of the four -- either by cooking with oil, or
baking/microwaving the flour until the gluten is kicked out.

I make a gumbo with roux, holy trinity (onions, peppers, celery), andouille
sausage, and either turkey or some kind of seafood (crawfish, shrimp,
scallops, etc.)."
