It is great to read articles in the various newsletters informing people with celiac disease that the alternative grains are nutritious, and acknowledging that they are gluten-free. Sylvan Border Farm was one of the first companies to include alternative grains in our mixes. Being the first to include these grains hasn't been easy. I receive calls every week asking whether or not amaranth and quinoa are safe for people with celiac disease to eat. Today as I was reading an article about alternative grains written by Shelley Case, I received two calls asking if all of the grains that we use are gluten-free. We have had our mixes tested by the University of Nebraska. When testing for gluten the Elisa Test can test as low as 10 parts per million. The test Sylvan Border Farm products indicate that the test for gluten is below the level of detection. We are pleased the List Serv is available to provide its members with correct information. You will enjoy the wonderful flavors and baking properties of our products, and you can include them in your diet knowing that they are truly gluten-free.
