Which country was that, please? I left my heart there. In Colombia we ate
Mondongo soup which was tripe in a tomato based soup. It was delicious.

I did a search on Mondongo and there seems to be a recipe for most Latin
American countries.

mondongo recipe, though I never found any.  One
Peruvian specialty of paleo interest

would be anticuchos, which is grilled kebabs made
of marinated beef heart, pachamanca -- meat seasoned with huacatay (black

mint) and roasted in pit lined with hot rocks,
and the key to making great tasting chicken soup
-- the feet.  Our first day in

our new home in Peru, we went out to a restarant
and were horrified to discover a foot in the soup.  On the day we left that

city, I was at a friends house preparing lunch,
looked in the fridge to see what I could find, and said, "Oh good, chicken

feet.  We'll make soup."  Funny how exposure changes your perspective.
