If you have access to Tofutti products (specifically Sour Supreme), you
can make a moist coffee cake from the recipe for "Sock-It-To-Me Cake"
found on packages of Duncan Hines Moist Deluxe Butter Recipe Golden Cake
Mix (which is one of the few cake mixes bearing the circled U kosher
marking) or at the Duncan Hines website at www.duncanhines.com

I merely substituted 1 cup of Sour Supreme for the 1 cup of sour cream
called for in the recipe and just dusted the cake with powdered sugar
instead of icing it.  The recipe calls for vegetable oil so you don't
have to worry about finding a dairy-free margarine for this cake. (The
other ingredients, in addition to the cake mix, Sour Supreme and oil,
are brown sugar, cinnamon, pecans [optional], eggs, water and sugar.) It
is a nice dessert to make when you don't have a lot of time to sift and
measure ingredients for a "from scratch" cake. The cake remains moist
for several days.
