I can't speak for its cookability, but Silk has a soy creamer - vanilla- that is pretty thick, so
you might try that.  I agree with the tofutti...There are lots of good soy ice creams out there.

The wacky thing I've found is that some soy cheeses have milk products in them, only a few are
vegan...
