A polyunsaturated fat is a fat missing four or more hydrogen atoms. This
results in increased free radical damage to the cells.
Oils other than olive or canola. Foods high in oxidized polyunsaturates ie.
french fries, donuts. especially oils that are partially hydrogenated.
